Not sure if they are still available, but after pebble shut down, I got this Chinese watch called amazfit bip. It has a color e-ink display and lasts roughly a week on a full charge.
I was able to sync to my phone using FOSS called gadgetbridge so I didn’t have to install sketchy Chinese software on my phone.
Iirc there’s a pine watch. Maybe it didn’t have e-ink
The problem is that e-ink is a patented technology and the patent owner charges insanely high royalties for using it in your product.
I’ve been using Joplin server in a docker container exposed via Traefik for almost 2 years now and I use it daily and have had no issues at all.
Highly recommend this setup, and docker+Traefik for pretty much everything.

I would not recommend swapping out major components without doing a new install. Linux installation is quite simple these days, so back up your configs and put them in place in the new installation.
If you run things in containers, these kinds of issues are not as relevant. You can run jellyfin in docker the same on any host and pass the GPU through for xcoding.

Nextcloud can be self hosted very cheaply, or you can find some hosted instances. There are applications that can encrypt cloud storage for some services. I would recommend just getting a NAS or a VPS and running nextcloud on it.
I will never understand why people dont just use firefox and its derrivatives…
Airsonic Advanced and DSUB on Android are pretty good options since DSUB has advanced local caching options.
I aquire my music then run it through Picard for tagging which places it into my NAS where it is mounted to airsonic and jellyfin containers for consumption.
The jellyfin apps have gotten a lot better and I find myself using feishin and finamp more often lately.
