Have a K3 Pro at work, and I think the K8 Pro feels a lot better, especially with the 3d printed case. Because of the reduced travel I keep bottoming out the keys on the K3 which does not feel like it is good for my hands. Also tried o-rings, but they don’t work the same way as on a normal profile keyboard.
The V-series is a lot lower, and if I knew about those from the start I’d most probably just get one of those and skip the bluetooth.
I did not, it is still in its original case. In the new case there is a holder for a cylindrical li-ion battery. Have not dared trying it yet, though, but pretty sure it will work.
It was way more work than I anticipated. Getting the measurements correct for the standoffs, daughterboard, switches etc took a lot of work and test prints to get right. OTOH I got a working prototype ready pretty fast (1-2 days) which basically just had the standoffs and the daughterboard exposed.

How did you get the placement of the standoffs correct? What did you use for standoffs? Are those screws covered in o-rings? Are those keycaps the same type as the Keychron low profile series?
Having been working on a custom 3d-printable case for my K8Pro, and one of the biggest challenges has been the exact locations of the standoffs.
They do not. It was suggested that ones with flavour containing diacetyl could cause popcorn lung. However, cigarettes contain a lot more diacetyl, and popcorn lung is not one of the many health risks of smoking. There is some anecdotal connection between diacetyl and popcorn lung, but far from a scientific consensus.
